Seasons of Life

Sitting under the tree in this beautiful Autumn day, I couldn’t help but be thankful that I am where I am now. I used to, Lord knows, not like how I was not able to do anything more apart from my mommy-duties. Don’t get me wrong, I love my kids more than my life and I never regretted leaving my I.T. career for them but somewhere deep down my heart, I wanted to do something more.

I am a dreamer. I am a queen of 1001 ideas. I love to do significant things and be able to contribute. And as seasons come and go, little by little, I am able to do just that. I have a business (that I am so passionate about!) that help me reach out to people who want to have their own version of fresh starts. I am able to contribute my time and resources to my church, community and of course, my family. There is still so much more that I can do in these areas but right here, right now, I am already very thankful.

Banana Oat Muffins

Despite my lack of gifting in the kitchen, I am motivated to give baking a go because I know how much my kids love home baked goodies. Thanks to my trusty Thermomix for making my domesticated life so much easier. *wink*

As always, feel free to make adjustments to the amount of sugar you put in. Recipe is lifted from recipecommunity.com.au.

INGREDIENTS:

220g rolled oats
2 ripe bananas, halved, approx 220g
60g brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
2 eggs
250g natural yoghurt
30g Shredded coconut
90g sultanas

METHOD:

1. Pre-heat oven to 200 degrees.
2. Add all ingredients except coconut and sultanas to the thermomix bowl.
3. Mix 20 seconds, speed 6.
4. Add coconut and sultanas and mix 10 seconds, speed 2, counter-clockwise operation or until coconut and sultanas are incorporated into mixture.
5. Pour into a greased muffin tray.
6. Bake 20 mins or until golden brown.

My 2015 Scrapbook Project

I have lost count of the times I have attempted to start and not finish a digital scrapbook project. Although I have a few (okay, probably about 4) that were printed but I used Shutterfly’s ready-made templates for them and I don’t think they count as scrapbook projects. Hee. I am happy though that there is now a #projectlifeapp that should make it easier for me to complete projects, but still, I have only made about 5 pages so far! Yikes!

I sorely miss making photobook pages. I’m sure the hubs and the kids would love to browse through them, laugh and talk about the great memories we all have made. Sometimes they will see the pages on my computer and they will start reminiscing about what happened at that time.

As with anything, commitment and dedication are needed to tick-off this task on my to-do list. I’m crossing my toes, I would finish my 2012 photo book this year! 🙂

Trip to Jamie’s

From his shows and cookbooks, I began to like Jamie Oliver’s style of cooking – simple, fresh and the end products look naturally tasty. So, when the husband suggested that we try his restaurant, I had to say a loud, “Yes, please!” 🙂

A few weeks ago, our little family went to the city and had a taste of a few of his dishes. I love that they all had simple flavours, nowhere near other restaurants we’ve tried, which uses enhancers that mask the natural taste of the meat and vegetables. The husband enjoyed his squid ink risotto, I had a serving of salmon pasta, the kids had fish fingers and spaghetti bolognese. My favorite though is the starter, polenta chips. Wish I could make them myself. Hee.

Still Cleansing and Loving It!

Just as how you get excited when you received a gift, bought a new bag or gadget, that you want to immediately shout to the whole world that you have it, that’s the feeling I have now that I reap really good results from my 30-day cleansing.

I am on my 16th day and I love the extra, natural energy that I now have. I think I am ready to either hit the gym or do some form of exercise at home to gain me some muscles! Yea! I also notice how, I no longer look sick. My eyes are less puffy, and since I feel light, my face no longer looks haggard. Those are winner results in my book!

I can’t believe that the day would come that I’ll be seriously doing something for my health. My family needs me and I want to be there for them, 100%. And, someday I want to be doing things for myself, too! How will I achieve that when my soul is willing but my earthly body is weak?

So, watch out world. I am excited for the final two weeks of cleansing!
