Baked Donuts

I have always loved this pikelet recipe as it has been my go-to for the kids’ breakfast and packed school snacks. I add either a banana, natural sprinkles and choco chips for variety!

But the other night, I went gung ho to try the same recipe using a donut pan! The kids were so excited to see the pikelet “transformation” and so I went ahead and made another batch for the kids’ school event today.

I try my best to minimize the sugar in the recipes I use and therefore, feel free to make adjustments from the original pikelet recipe lifted from the Everyday Cookbook!

INGREDIENTS:

20g melted butter
140g self-raising flour
1/4 tsp sea salt
30g caster sugar {I use raw sugar}
1/4 tsp bicarb of soda
150g buttermilk
1 egg

METHOD:

1. Preheat oven at 180Cdeg.
2. Add all ingredients in a bowl and mix until a smooth consistency is achieved.
3. Pour the batter until about 3/4 size of the donut holes.
4. Bake between 8-10 minutes.
5. Allow to cool completely before dipping in the glaze.

GLAZE:

1 cup icing sugar
1 tsp vanilla
2 tbsps water or milka

METHOD:

Sift icing sugar in a bow. Mix all the other ingredients.
