ANZAC Biscuits

I never knew that ANZAC biscuits are so easy to make! Recipe lifted from


125g butter {I used organic butter.}
1tbsp golden syrup {I used maple syrup.}
180g brown sugar {120g is enough. Maybe even 100g.}
95g rolled oats
90g dessicated coconut
150g plain flour {I used g/f plain flour for this batch.}
1tsp bicarbonate soda
2tbsp boiling water
1/2 tsp salt


1. Preheat oven to 180°C (160°C fan forced).
2. Add butter and golden syrup to the Thermomix bowl and melt for 2 minutes, 80°C and speed 2.
3. Add brown sugar and melt 1 minute, 80°C and speed 2.
4. Combine the bicarbonate soda and water. Mix until dissolved.
5. Add oats, coconut, flour, salt and the bicarbonate/water mixture. Mix in reverse mode, for 10 seconds in speed 4.
6. Place spoonfuls of the mixture onto lined baking trays and bake for 10-12 minutes. Allow to cool on tray.
